Kale and Quinoa Salad

Ingredients:

  • 1 cup quinoa (uncooked)
  • 2 cups water
  • 4 cups kale, stems removed and leaves chopped
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup almonds, sliced or chopped
For the Lemon Vinaigrette:
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon honey or maple syrup (for a vegan option)
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa: In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes, or until all the water is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and allow it to cool.
