Simple and Buttery Shortbread

Shortbread is one of those timeless treats: rich, buttery, and irresistibly simple. Whether you’re looking for a thoughtful homemade gift or a dessert that pairs perfectly with coffee or tea, this recipe is a family favorite!

You’ll need:

  • 1 cup unsalted butter, room temperature
  • 1 teaspoon kosher salt
  • 2/3 cup granulated sugar
  • 1.5 teaspoons vanilla extract (optional)
  • 2 cups all-purpose flour

To make:

  • Heat your oven to 325°F
  • In a large bowl, cream the softened butter.
  • Add the salt and mix until fully incorporated.
  • Stir in the sugar and vanilla (if using) gradually until everything is well combined.
  • Add the flour and mix just until it is absorbed. The dough will look a bit lumpy.
  • Press the dough into an ungreased 8-inch square baking pan, ensuring it’s even. Line the pan with parchment paper for easy removal.
  • Using a butterknife, outline your 2-inch x 1-inch fingers.
  • Use a fork to poke holes in the dough to prevent it from puffing up.
  • Bake for 45 to 50 minutes.
  • The shortbread is ready when it turns a lovely golden brown.
  • Transfer the pan to a wire rack to cool slightly. While the shortbread is still warm, cut it into fingers.
  • If desired, sprinkle a tablespoon of sparkling, superfine, or granulated sugar over the top for an added touch of sweetness.
